Iron Skillet Meat Lovers Pizza

Pizza Dough Ingredients

2 cups of warm water
2 packages of yeast or 1 tablespoon dry yeast
1 tablespoons sugar
3 tablespoons olive oil
5 cups flour
2 teaspoons salt

Pizza Dough Instructions

1. Place warm water, yeast and sugar in mixing bowl.  Stir and let sit for 5 minutes or until yeast poofs.

2. Add oil, flour and salt.  Mix with dough hook until dough forms a ball.  Then continue mixing on low speed for 5 minutes.

3. Place dough in oiled bowl, cover with plastic wrap and let rise in warm, draft place until double in size.

4. Punch dough and divide into 3 equal sections.  Let dough rest for five minutes.  Roll dough out on surface dusted with cornmeal.  Makes enough dough for 3 pizzas.

Quick Pizza Sauce Ingredients

16 ounce tomato sauce
1/2 cup water
1 tablespoon dried onion flakes
1 teaspoon dried garlic flakes
1/4 teaspoon salt
1/8th teaspoon Italian seasoning

Quick Pizza Sauce Instructions

1. Heat 16 ounce tomato sauce and water in sauce pan. Add 1 tablespoon dried onion flakes, 1 teaspoon dried garlic flakes, 1/4 teaspoon salt, and 1/8th teaspoon Italian seasoning.

2. Bring to a simmer and cook for 10 minutes.

3. Makes enough for 3 pizzas.

Meat Lovers Pizza Ingredients (per pizza)

1 tablespoon olive oil
1 tablespoon cornmeal
2/3 cup pizza sauce
3 cups grated mozzarella cheese
4 ounce sliced capicola
4 ounce sliced Canadian bacon
3 ounce cooked spicy Italian sausage
4 ounce sliced pepperoni
2 tablespoons grated Parmesan cheese
1/4 teaspoon red pepper flakes

Meat Lovers Pizza Instructions

1. Roll out 1/3 of pizza dough the size of the skillet.  Sprinkle with cornmeal and let sit for 5 minutes.

2. Heat oven to 500 degrees, place large iron skillet into oven for 20-30 minutes.

3. Remove skillet from oven and place 1 tablespoon of olive oil in pan.  Place dough, cornmeal side down into iron skillet.  Cook 3 ounce of Italian sausage with casing removed.

4. Top dough with pizza sauce, cheese, capicola, Canadian bacon, Italian sausage and pepperoni.  Place into oven and cook until golden brown around the edges and cheese is melted.

5. Remove from oven and let sit in skillet for 3 minutes.  Sprinkle pizza with Parmesan cheese and red pepper flakes.

6. Remove pizza from skillet to wooden cutting board.

7. Cut pizza into 12 slices and serve.
