Granola
- 3 cups old fashioned oatmeal
- 1½ cups assorted nuts
- ½ cup assorted seeds, ie, pepitas, sunflower etc
- ½ cup flaked coconut
- ½ cup vegetable oil, heated in microwave for 30 seconds
- ½ cup honey, heated in microwave for 30 seconds
- 1 teaspoon salt
- Mix all ingredients in a large bowl.
- Place on silpat or parchment paper lined sheet tray. Bake 300 degrees for one hour, mix 1-2 times during cooking process.
- Place on new sheet of parchment paper and allow to cool. Once the granola cools, you can add dried fruit if you wish.
- Store in sealed container.
