Maître d’Hôtel Butter can be used to finish a steak or fish. It is great to make ahead when you have fresh parsley and lemons available, and keep on hand in the freezer.
Ingredients
1 cup butter, at room temperature
2 Tablespoons finely minced parsley
2 Tablespoons lemon juice
1/2 teaspoon salt
Instructions
1. Place all ingredients into small bowl and mix well.
2. Place butter on a sheet of plastic wrap and form into a shape of a log.
3. Roll plastic wrap around the butter. Grasp ends and plastic and tighten wrap around the butter.
4. Place wrapped butter into the refrigerator to firm up. May also freeze.
